Loaded with flavor and texture, this meal is actually fairly simple and quick to prepare. Much faster than waiting for takeout to arrive, and you know the healthy ingredients going onto your plate and into your body. Feel free to substitute the chicken for beef, pork or tofu.
Ingredients
¼ cup honey
2 tsp minced garlic
1/3 cup water
1/3 cup soy or coconut amino sauce
3 tsp corn starch
1 tbsp olive oil
1½ lbs chopped chicken breast or thighs
3 cups of broccoli florets
Salt and pepper
2 tsp minced garlic
¾ tsp turmeric
3 large carrots, cut on an angle
Instructions
- Prepare your favourite rice – I love Basmati or Jasmine.
- While the rice is cooking, steam the broccoli until desired softness/firmness, then put aside.
- Add first 5 ingredients to small pot. Stir together, cook for 5 minutes, put to the side.
- Heat oil in a deep frying pan or wok.
- Add chicken, salt and pepper, minced garlic, turmeric.
- Once chicken is cooked add carrots, teriyaki sauce and steamed broccoli. Simmer for 5 minutes, then serve over rice.
